Questions
Which gallon is used? The US gallon, at 3.785 litres. The imperial gallon used in the UK is about 20% larger, at 4.546 litres, which is a common source of confusion in recipes.
Why is temperature handled separately? Because the scales have different zero points, not just different sizes. Every other unit here converts by multiplying; temperature needs an offset as well, which is why −40 is the same in Celsius and Fahrenheit.
